Klean Isolate™ Quick Cornbread

High-protein cornbread? Yes indeed. All the flavor with the added benefit of extra protein: 7 grams per slice, to be exact. Cornbread adds a crumbly sweetness to chili, chicken or soup. Try grilling it and top with apple butter and Canadian bacon, or slice to make an out-of-the-ordinary sandwich. This recipe also provides the added punch of calcium and potassium, and using the vanilla protein powder means you can also use a little less sugar in the recipe. How sweet is that?
YIELD: 8 servings
INGREDIENTS
- 1 cup flour
- ½ cup cornmeal
- 1 scoop Klean Isolate™, natural vanilla flavor
- 1/3 cup + 1 tbsp sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup skim milk
- ½ cup + 2 tbsp canola oil
- 2 eggs, beaten
DIRECTIONS
- Combine flour, cornmeal, Klean Isolate™, sugar, baking powder and salt in a bowl.
- Stir in beaten eggs, milk and oil, mixing until dry ingredients are moistened.
- Pour batter into a 9-inch, microwave-safe pie plate. Microwave on HIGH for 2 minutes, rotate dish and continue cooking for 4-5 minutes.
- Let stand for 5 minutes before serving.
