Klean Sweet Potato and Kale Soup

Here we have a creamy, tasty, plant-based soup providing all 20 amino acids to support muscle building and recovery, and a blast of antioxidants to help support your cells even with intense training. This soup is a great complement to lunch or dinner, and can even act as a snack to fill in hunger gaps. For those of you attempting to maintain or lose weight while sustaining a rigorous training regimen, this soup is for you. It’s filling and provides a nice dose of protein! YIELD: 4 servings

INGREDIENTS

  • Roasted Sweet Potatoes
  • 2 medium sweet potatoes, cubed
  • 1-2 tbsp olive oil to coat peeled and diced sweet potatoes
  • Salt and ground black pepper to taste
  • 4 cups vegetable broth
  • ¼ cup onion
  • 1 tsp cinnamon
  • ½ cup of Klean Isolate™ Whey Protein Powder
  • 2 cups kale, chopped

DIRECTIONS

  1. Preheat your oven to 400°F. Peel and cube the sweet potatoes into a small bowl. Drizzle with olive oil and sprinkle with salt and ground black pepper to taste. Place tin foil on a baking sheet and scatter the cubed sweet potatoes on the tray. Roast for 30 minutes.
  2. Place the roasted sweet potatoes, veggie broth, onion, cinnamon and Klean Isolate™ in a food processor or blender. Puree until smooth.
  3. Pour the soup mixture into a pot. Add chopped kale to thicken the soup and add texture. Cook slightly. Serve promptly or store in the refrigerator for later enjoyment.

Storage Instructions: Refrigerate in an airtight container for up to 1 week.

Karlyn Grimes, MS RD LDN CSSD, is the founder of Simply Simple Health (SSH) and author of The Everything Anti-Inflammation Diet Book. SSH creates and administers nutrition, fitness and health education programs for athletes, educators, coaches and sports teams at schools and colleges throughout the Boston area. Its programming includes individual and group sports nutrition counseling, as well as sport-specific personal training. SSH also contributes to numerous academic textbooks and magazines.

Karlyn has a dual Master’s degree in nutrition and exercise physiology from Boston University and a Bachelor of Arts degree in biology from Colgate University, with a minor in economics. She is a registered dietitian (RD) with the Academy of Nutrition and Dietetics, a certified specialist in Sports Dietetics (CSSD) and a licensed dietitian nutritionist (LDN) in the state of Massachusetts. She is currently a faculty member in the Nutrition and Biology Departments at Simmons College in Boston, where she teaches sports nutrition, medical nutrition therapy, exercise physiology, anatomy and physiology, general biology, and numerous other courses.
